This is new to me: I always understood that leather was dried in the dark - usually on a upper floor of a tannery with louvred windows shuttered down - to prevent discolouration. No doubt someone will explain ...

The white objects drying are parchments. The area was well know for both tanneries and parchment making.

This area is well known for its parchment is I would assume these are the limed skins drying.
